Steve pulls every shot and pours every filter himself, adjusting grind and ratio through the morning as beans, temperature and the machine settle in — which is why the same origin can taste slightly different at 8am and at 2pm, and why regulars know to ask what's on.
It's a small room with a handful of seats, built for people who want their coffee unrushed — whether that's ten minutes with a flat white or an hour with a laptop and a filter that keeps getting topped up.

Canol means "middle" in Welsh — the idea being a small, central spot to stop, slow down, and drink something properly made before getting on with the day. Steve roasts relationships with a handful of importers rather than one big supplier, so the origin on the board changes every few weeks as new lots come in.
